Many recipes call for draining fried food on paper towels -- which results in a soggy crust where the food touches the towels. Instead, line a baking sheet with paper towels (or grocery bags), add a baking rack, and drain your fried delectables on the rack. Air circulates underneath and everything stays nice and crisp.
